Salmon Marsala

Ingredients
  • 4 Alaska salmon fillets (4-6 ounces each)
  • salt and pepper, to taste
  • 2 cups flour
  • 1/2 cup olive oil
  • 1 cup Marsala wine
  • 2 cups mushrooms, sliced
  • 2 cups chicken stock
  • 2 teaspoons fresh thyme
  • 2 tablespoons cold butter
  • 4 fresh thyme sprigs, for garnish
Preparation
  1. Season salmon fillets with salt and pepper, to taste. On plate, season flour with salt and pepper, to taste. Dredge both sides of each salmon fillet in seasoned flour, shaking off excess.
  2. Heat large saute pan and add olive oil then place each piece of salmon in pan. Cook for 2-4 minutes, turn fillets over and cook until almost done. Remove fillets from pan; set aside.
  3. Off heat, add wine to pan, scraping bits off the bottom. Return pan to heat and add mushrooms. Season with salt and pepper, to taste, and cook for 1 minute. Add stock and thyme, and let liquid reduce by half.
  4. Return salmon fillets to pan. Cook, while basting fish, until fillets are heated through. Remove fillets to 4 serving plates.
  5. Return pan to heat, add cold butter and swirl until incorporated and sauce slightly thickens. Remove from heat and divide sauce evenly over salmon fillets. Garnish each plate with 1 thyme sprig, if desired.

Ingredients
  • 1/4 cup olive oil
  • 1/2 cup red onion
  • 2 teaspoons garlic, chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • salt and pepper, to taste
  • 4 tablespoons flour
  • 2 cups chicken stock
  • 1/2 cup tomato, seeded and chopped
  • 2 teaspoons fresh thyme
  • 4 wild Alaska cod or pollock fillets (4-6 ounces each)
  • 2 cups mashed potatoes, warmed
  • 4 fresh thyme sprigs, for garnish
Preparation
  1. In hot saute pan, cook olive oil, onion and garlic for 1 minute. Add both peppers and salt and pepper, and saute 2 minutes. Add flour and stir until flour turns light brown. Add chicken stock and stir until liquid smooths and starts to thicken. Add tomato and thyme.
  2. Season fish with salt and pepper, to taste, and place into simmering sauce and cover. Cook 3-4 minutes, carefully turn, cover and continue to cook until done, 3-4 minutes.
  3. To serve, place 1/2 cup of mashed potatoes on 4 serving plates. Carefully remove each piece of fish and place on top of mashed potatoes. Evenly divide sauce over each piece of fish. Garnish each plate with 1 sprig of fresh thyme, if desired.

Alaska Sockeye Salmon with Herbs and Garlic

Ingredients
  • 1 1/2 pounds Alaska sockeye salmon, fresh or thawed
  • Cooking spray
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup white wine
  • 2 tablespoons melted butter or extra-virgin olive oil
  • 2 tablespoons finely minced fresh garlic
  • 2 tablespoons chopped fresh herbs
Preparation
  1. Remove salmon from refrigerator 15 minutes before cooking. Heat grill to 375°F.
  2. Cut 2 pieces of wide, heavy-duty aluminum foil about 6 inches longer than salmon side. Stack foil pieces (shiny side down) on baking sheet and spray generously with cooking spray. Place salmon, skin side down, in middle of foil. Fold foil sides and ends up (1–2 inches) to make shallow pan around salmon, leaving at least a 1-inch margin around fish. Season salmon with salt and pepper.
  3. In small bowl, mix together wine, butter, garlic and herbs. Spoon mixture over top of salmon, drizzling with any remaining liquid.
  4. Carefully transfer foil pan to center of preheated grill. Do not cover salmon with foil or close foil over salmon. Close grill cover and cook 10–13 minutes, cooking just until fish is lightly translucent in center — it will finish cooking from retained heat. Remove from grill and let rest a few minutes before serving.

Amazing M&M’S Cookies

Description

Bake Amazing M&M’S Cookies with butter, brown sugar, vanilla extract and M&M’S Milk Chocolate Candies.

Ingredients
  • 1 cup (2 sticks) butter
  • 2/3 cup brown sugar
  • 2/3 cup granulated sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 2 cups flour
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 3/4 cups M&M’S Milk Chocolate Candies
Preparation
  1. Preheat oven to 350°F.
  2. In large bowl, cream butter and both sugars until well blended. Add egg and vanilla extract, and mix to combine.
  3. In separate bowl, sift flour, baking soda and salt together. Slowly add dry ingredients into butter mixture and stir until combined.
  4. Fold in candies and chill dough for 1 hour or overnight.
  5. Drop dough by rounded tablespoons onto lightly greased tray, about 2 inches apart.
  6. Bake for 8 to 10 minutes for chewy cookies, or 12 to 14 minutes for crispy cookies.

Simply Sweet Cannoli

Ingredients
  • 1 cup Snickers Bars, finely chopped
  • 1 1/2 cups part skim milk ricotta
  • 1/3 cup sugar
  • 1/2 teaspoon grated orange zest
  • 1 resealable plastic bag
  • 24 mini cannoli shells, unfilled
  • 1/2 cup M&M’S Chocolate Candies
Preparation
  1. Combine chopped candy bars with ricotta, sugar and orange zest.
  2. Spoon mixture into resealable bag and snip off a 1/2-inch corner. Fill cannoli shells by squeezing in filling from each end.
  3. Decorate both ends with chocolate candies.

  1. Preheat oven to 350°F.

  • 1 cup canola or vegetable oil
  • 2 cups sugar
  • 4 eggs

  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups M&M’S Peanut Butter Candies, divided
Preparation
  1. Preheat oven to 350°F.
  2. Lightly grease a rectangular 13 x 9 x 2-inch pan
  3. In 3-quart saucepan, gently combine the semisweet chocolate and oil over very low heat until melted. Remove from heat and allow to cool.
  4. In separate bowl, combine sugar, eggs and vanilla extract until blended. Add in chocolate mixture. Slowly sift in remaining dry ingredients and mix until combined.
  5. Fold in 1 1/2 cups candies.
  6. Spread batter into pan. Sprinkle with remaining 1/2 cup candies and press lightly.
  7. Bake until brownies begin to pull away from sides of pan, about 30 to 40 minutes.

According to the JOHNSON’S Global Bath Time Report, only 19 percent of parents in the U.S. understand that baby massages are extremely important to their child’s brain development with nearly three in 10 (28 percent) saying it’s not at all important. Yet, this skin-on-skin contact through routine massage can lead to improved cognitive development and increased alertness and attentiveness for children.

Greek Pizza

Ingredients
  • 3 tablespoons olive oil, divided
  • 1 medium red onion, halved and thinly sliced
  • 1 pound prepared pizza dough
  • 2 tablespoons olive oil
  • 1/2 cup prepared pesto sauce
  • 1 (14-ounce) can artichoke hearts, drained and quartered
  • 1 (10-ounce) can chicken breast, drained and flaked
  • 1 (4-ounce ) can sliced mushrooms, drained
  • 1 (3.8-ounce) can sliced ripe olives, drained
  • 1/2 cup crumbled feta cheese
Preparation
  1. Heat 1 tablespoon oil in 12-inch skillet over medium heat, and cook onion until just softened, about 5 minutes. Set aside.
  2. Divide dough into 2 equal balls. On well-floured surface, use floured rolling pin to roll each ball into a 10-inch circle. Place on large cookie sheets or pizza pans. Brush each crust with 1 tablespoon olive oil.
  3. Preheat oven 425°F.
  4. Spread pizza dough with pesto sauce to within 1 inch of edge. Top with red onion, artichoke hearts, chicken, mushrooms, olives and feta cheese. Bake 15 minutes or until crust is golden.

Tuna Apple Melt

Ingredients
  • 1 (12-ounce) can solid white tuna in water, drained and flaked
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 red apple, cored and diced
  • 1 celery stalk, diced
  • 2 tablespoons canned whole-berry cranberry sauce
  • 1 tablespoon butter, softened
  • 4 1/2-inch thick slices sourdough bread
  • 4 slices provolone or Muenster cheese
  • Celery sticks, optional
Preparation
  1. In large bowl combine tuna, mayonnaise and Dijon mustard until well blended; stir in apple, celery and cranberry sauce.
  2. Spread one side of bread with butter. Place bread slices, butter-side down, in 12-inch non-stick skillet over medium heat. Top each with a slice of cheese. Cover and cook over medium heat 3-4 minutes until cheese is melted and bottom of bread is golden.
  3. Remove bread to plate; top each piece with some tuna mixture.
  4. Serve warm, with celery sticks if desired.

  • 1          package (10 ounces) fresh vegetable stir-fry blend
  • 3          tablespoons water
  • 2          beef ranch steaks (about 8 ounces each), cut 3/4-inch thick
  • 1          clove garlic, minced
  • 1/2       cup prepared sesame-ginger stir-fry sauce
  • 1/4       teaspoon crushed red pepper
  • 2          cups hot cooked rice or brown rice, prepared without butter or salt
  • 1/4       cup dry-roasted peanuts
  1. In large, nonstick skillet, combine vegetables and water; cover and cook over medium-high heat 4 minutes, or until crisp-tender. Remove and drain vegetables. Set aside.
  2. Meanwhile, cut beef steaks into 1/4-inch thick strips.
  3. Heat same skillet over medium-high heat until hot. Add half of beef and half of garlic; stir-fry 1-2 minutes, or until outside surface of beef is no longer pink. Remove from skillet; keep warm.
  4. Repeat with remaining beef and garlic.
  5. Return all beef and vegetables to skillet. Add stir-fry sauce and red pepper; cook and stir 1-2 minutes, or until heated through. Spoon over rice. Sprinkle with peanuts.

  • 4          beef tenderloin steaks (4 ounces each), cut 3/4-inch thick
  • 1/2       teaspoon coarse ground black pepper
  • 1          package (5 ounces) mixed baby salad greens
  • 1          medium red or green pear, cored, cut into 16 wedges
  • 1/4       cup dried cranberries
  • salt, to taste
  • 1/4       cup coarsely chopped pecans, toasted
  • 1/4       cup crumbled goat cheese (optional)

Honey Mustard Dressing

  • 1/2       cup prepared honey mustard
  • 2-3       tablespoons water
  • 1 1/2    teaspoons olive oil
  • 1          teaspoon white wine vinegar
  • 1/4       teaspoon coarse ground black pepper
  • 1/8       teaspoon salt
  1. Season beef steaks with pepper. Heat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook 7-10 minutes for medium rare (145° F) to medium (160° F) doneness, turning occasionally.
  2. Meanwhile, in small bowl, whisk Honey Mustard Dressing ingredients until well blended. Set aside.
  3. Divide greens evenly among four plates. Top evenly with pear wedges and dried cranberries.
  4. Carve steaks into thin slices; season with salt, as desired. Divide steak slices evenly over salads. Top each salad evenly with dressing, pecans and goat cheese, if desired.
